Help with new GM Vortec Crate Motor

I have a 78 GMC p/u and installed a new vortec crate motor. Motor runs great except when at cruising speed, when you let off the gas and try and give gas again it wants to stall. The carb has been rejetted and all new cap, rotor and plug wires. So now what?????

I don't think the carb jets are your problem. Check to make sure all your vacuum lines are connected properly, and that you don't have a vacuum leak.
I'd also check the fuel system leading up to the carb, make sure you don't have a restriction, or possibly a problem with vapor lock being caused by heat or vibration.
